The freeze usually lasts about 2-5 seconds. It just locks completely up, but it generally appears like the game doesn't progress during this time frame which is odd, but if a sound byte is happening at the time of the freeze it will continue until the freeze resumes. I'm the one hosting, which is odd since I would assume that the client would be more likely to experience a pause like this. I know that this is a pretty old thread, but I just wanted to say that I'm experiencing this same issue playing online multiplayer with one other person on Switch(v1.4), but oddly enough I'm the only one that is experiencing this intermittent freezing.
